Pineapple Chicken Stir Fry

  1. Mix 2 tbsp. of the cornstarch with 3 tbsp. water to make a slurry; set aside. Coat chicken slices with remaining cornstarch.
  2. Add oils to a heated wok, then brown chicken in it. Add garlic, onions, and peppers and fry together.
  3. Stir in sugar and ketchup. Deglaze pan by adding broth and pineapple juice.
  4. Add all remaining ingredients except cornstarch slurry and allow to simmer for 5 minutes.
  5. Add cornstarch slurry and simmer 1 more minute. Serve over steamed rice.
