Directions:

  1. Preheat oven to 350.
  2. Rehydrate spinach, mushrooms, and onions and drain. Set aside.
  3. Cook manicotti in boiling salted water for about 7 minutes. Dip in ice water and then place on sheet pan to dry.
  4. In a medium bowl, combine 2 cups of mozzarella cheese, parmesan, ricotta, vegetables, and seasonings.
  5. Spread ¼ cup of sauce on bottom of a casserole pan to keep noodles from sticking.
  6. Stuff each manicotti shell with the cheese filling mixture. Place shells in pan.
  7. Cover pasta with rest of sauce and last 2 cups of cheese. Bake 20 minutes, until cheese is melted and sauce is bubbly.
